Chana chaat (Chickpea and fruit salad) – Phase 3 and Phase 1

This chana chaat is a healthy Indian recipe that works for Phase 3 lunches and Phase 1 if you skip the olive oil.

Ingredients:

1 cup boiled chickpeas or 1 19oz. can
1/2 cup Chopped pineapple
3 tblsp Chopped raw mango (optional)
1/2 cup Chopped cucumber
1/3 cup Pomegranate seeds
1/2 a bell pepper, diced
1/2 cup Chopped tomato
1/4 cup Roasted sweet potato cubes (optional)

For Dressing:
10 Mint leaves, chopped fine
3 tsp Olive oil
A pinch of stevia (optional)
1 tbsp Lemon juice
1/2 tsp Chilli flakes
1/2 tsp Grated ginger
1/2 tsp Pepper powder
1/2 tsp Black salt (optional)
1/2 tsp Chat masala
1/2 tsp Salt

Method:

Mix all the ingredients of dressing.
Add all the fruits and vegetables in a big bowl.
Mix in the dressing and chill for at least half an hour before serving.
